Slow Cooker Tomato Tortellini Soup

This creamy Slow Cooker Tomato Tortellini Soup is the ultimate comfort food for a cozy family dinner. Tender cheese tortellini, savory Italian sausage, rich tomato broth, and creamy chive-and-onion cream cheese come together to create a hearty soup that is incredibly easy to prepare.

Ingredients

  • 1 lb Italian sausage, casings removed
  • 1 (32 oz) container chicken broth
  • 1 (28 oz) can petite diced tomatoes
  • 2 (10.5 oz) cans tomato soup
  • 2 (8 oz) containers chive and onion cream cheese spread, softened
  • 1 (18 oz) package refrigerated cheese tortellini, uncooked

Instructions

Brown the Sausage

Heat a large skillet over medium heat. Add the Italian sausage and cook, breaking it apart with a spoon, until browned and no longer pink.

Drain any excess grease, then transfer the cooked sausage to the slow cooker.

Add the Tomato Base

Pour the chicken broth, petite diced tomatoes, and tomato soup into the slow cooker with the sausage.

Stir everything together until well combined.

Cover and cook on LOW for 6–8 hours, allowing the sausage and tomato flavors to develop.

Add the Cream Cheese

About 15–30 minutes before serving, add the softened chive and onion cream cheese to the slow cooker.

Stir well until the cream cheese melts into the tomato broth and creates a smooth, creamy soup.

Add the Tortellini

Add the refrigerated cheese tortellini and gently stir to distribute them throughout the soup.

Cover and cook on HIGH for 15–30 minutes, or until the tortellini are tender and cooked through.

Avoid overcooking the tortellini, as they can become too soft if left in the hot soup for too long.

Serve

Once the tortellini are tender, give the soup a gentle stir and serve immediately while hot and creamy.

For an extra touch, serve with warm crusty bread, garlic bread, or a simple green salad.

Tips for the Best Tomato Tortellini Soup

Soften the cream cheese before adding it to the slow cooker. This helps it melt more smoothly into the soup without leaving lumps.

Fresh refrigerated tortellini works especially well because it cooks quickly and stays tender.

If the soup becomes thicker than you prefer, stir in a little additional chicken broth before serving.

For extra flavor, you can add Italian seasoning, freshly grated Parmesan cheese, crushed red pepper flakes, or fresh basil.

For a lighter version, use turkey Italian sausage and reduced-fat cream cheese.

Storage

Allow leftover soup to cool before transferring it to an airtight container. Refrigerate for up to 3–4 days.

The tortellini will continue absorbing liquid as the soup sits, so add a splash of chicken broth when reheating if the soup has become too thick.
