  • 2 tablespoons lime juice
  • 1 tablespoon Worcestershire sauce

Tex-Mex Seasoning

  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • 1 teaspoon salt

For Serving

  • 8 flour tortillas, warmed
  • Fresh cilantro, chopped
  • Sour cream
  • Guacamole
  • Shredded cheese
  • Salsa

Instructions

Prepare the Vegetables

Place the sliced onions and bell peppers in the bottom of the slow cooker. Spread them into an even layer so they can cook underneath the steak and absorb all the flavorful juices.

Season the Steak

In a small bowl, combine the chili powder, cumin, smoked paprika, onion powder, garlic powder, oregano, salt, and black pepper.

Pat the steak dry with paper towels, then rub the seasoning mixture evenly over both sides of the steak.

Add Everything to the Slow Cooker

Place the seasoned steak on top of the sliced peppers and onions.

Add the minced garlic, diced tomatoes with green chilies, lime juice, Worcestershire sauce, and olive oil. Pour the mixture over and around the steak so the flavors can blend as everything cooks.

Slow Cook

Cover the slow cooker and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the steak is very tender.

For the most tender results, cooking on LOW is recommended.

Slice the Steak

Carefully remove the cooked steak from the slow cooker and let it rest for a few minutes.

Slice the steak thinly against the grain. Cutting against the grain shortens the muscle fibers and helps make every bite more tender.

Return the sliced steak to the slow cooker and stir it together with the peppers, onions, and flavorful cooking juices.

Warm the Tortillas

Warm the flour tortillas in a dry skillet, microwave, or oven until soft and flexible.

Assemble the Fajitas

Fill each warm tortilla with a generous portion of the tender steak, peppers, and onions.

Top with fresh cilantro, sour cream, guacamole, shredded cheese, and salsa according to your preference.

Serve immediately with rice, beans, or tortilla chips on the side.

Tips for the Best Slow Cooker Steak Fajitas

Slice the vegetables into fairly thick pieces so they retain some texture during the long cooking process.

Flank steak and skirt steak both work well, but slicing the finished meat against the grain is especially important for tenderness.

For stronger lime flavor, add a little fresh lime juice just before serving rather than relying only on the lime juice added during cooking.

If you prefer spicier fajitas, add sliced jalapeños, extra chili powder, cayenne pepper, or a few dashes of hot sauce.

For a lower-carb option, serve the steak and vegetables over cauliflower rice or in lettuce wraps instead of flour tortillas.

Serving Suggestions

Serve these flavorful steak fajitas with Mexican rice, black beans, refried beans, tortilla chips, fresh guacamole, salsa, or a simple corn salad.

For a complete fajita bar, place the warm steak and vegetables in the center of the table and arrange the tortillas, cheese, sour cream, guacamole, salsa, and cilantro around them so everyone can build their own fajitas.
