Ingredients
Chicken and Broccoli
- 3 cups cooked chicken breast, diced
- 3 cups broccoli florets, lightly steamed
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
Creamy Sauce
- 4 oz cream cheese, softened
- ¾ cup heavy cream
- ¼ cup chicken broth
- 2 cloves garlic, minced
- ½ tsp onion powder
- ½ tsp paprika
- Salt and black pepper, to taste
- 2 tbsp butter, optional
Optional Flavor Additions
- Crispy bacon bits
- ½ tsp Dijon mustard
- Grated Parmesan cheese
- Pinch of red pepper flakes
Instructions
Prepare the Oven
Preheat the oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish with cooking spray or butter and set aside.
Prepare the Cream Sauce
Place a medium saucepan over medium heat. If using butter, melt it in the saucepan.
Add the minced garlic and cook for about 30 seconds, just until fragrant. Be careful not to let the garlic brown.
Add the softened cream cheese, heavy cream, and chicken broth. Stir continuously until the cream cheese melts completely and the sauce becomes smooth and creamy.
Add the onion powder, paprika, salt, and black pepper. Stir to combine.
Add 1 cup of the shredded cheddar cheese and continue stirring until the cheese has completely melted into the sauce.
For extra flavor, stir in Dijon mustard or a pinch of red pepper flakes if desired.
Assemble the Casserole
Spread the diced cooked chicken evenly across the bottom of the prepared baking dish.
Add the lightly steamed broccoli and distribute it evenly over the chicken.
Pour the warm creamy cheese sauce over the chicken and broccoli, making sure everything is well coated.
Sprinkle the remaining cheddar cheese and the mozzarella evenly over the top.
Bake
Place the casserole in the preheated oven and bake for 20–25 minutes, or until hot, bubbly, and the cheese has melted completely.
For a beautifully golden and slightly crispy cheese topping, switch the oven to broil and broil for 2–3 minutes. Watch it closely so the cheese does not burn.
Rest and Serve
Remove the casserole from the oven and let it rest for about 5 minutes before serving.
For an extra flavorful finish, sprinkle crispy bacon, Parmesan cheese, or fresh herbs over the top.
Tips for the Best Keto Chicken Broccoli Casserole
Use rotisserie chicken for a quick and convenient option. Leftover roasted or grilled chicken also works perfectly.
Lightly steam the broccoli before adding it to the casserole. It should be tender but still slightly crisp because it will continue cooking in the oven.
Make sure the cream cheese is softened before making the sauce. This helps it blend smoothly with the heavy cream and chicken broth.
For an even richer casserole, add a little extra cheddar or Parmesan cheese to the sauce.
If you’re meal prepping, divide the casserole into individual portions after it has cooled and store them in airtight containers.
Serving Suggestions
Serve this casserole on its own for an easy low-carb meal, or pair it with a simple green salad, roasted vegetables, cauliflower rice, or sautéed zucchini.
It also makes an excellent make-ahead dinner because the leftovers reheat well and remain creamy and flavorful.
Storage and Reheating
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
Reheat individual portions in the microwave until heated through, or reheat larger portions in a covered baking dish at 350°F (175°C) until warm.
